Rose Gray

The founding partner of the River Café canteen and restaurant, Rose Gray died last week aged 71. Hers was the first modern Italian restaurant to serve authentic regional dishes.

A fan of Rose Gray since 1995, I cook River Cafe recipes every week and will always consider her to be a huge influence on how I cook and run my business.

Rose Gray will be remembered for bringing 'cucina povera' to the Britain and using authentic Italian ingredients.

It was only when I travelled to Italy in the late 90's that I really understood what Rose meant about fresh and local produce. Now I practice this in every aspect of my cooking.

Rose was a truly inspirational cook in a world of celebrity chefs - she will be missed by me and many others, not least Jamie Oliver and Hugh Fernley-Whittingstall who started at River Café.

Squisito offer our condolences to her family and business partner Ruth and thank her for her influence and the books she left behind.

To try one of Ruth's style of recipes try our family Sugo di Salsiccia recipe which was based on hers - Ruth is the reason I now make my own Italian sausages!
